Activated Nuts & Seeds

Nuts are a delicious and nutritious addition to a Paleo inspired way of life and make for a great snack for when you are on the road or away from the kitchen, as well as making a great addition to smoothies, and many many different recipes.
It’s important to purchase the best possible chemical-free (organic) nuts you can find. Properly prepare them by soaking them, then rinsing them (activating). You can do the same thing with seeds. Eat them like this once they have been rinsed but I prefer to dehydrate them in a low temp oven or dehydrator to make them lovely and crunchy again. Pop some spices on them to take the humble nut to new gastronomic heights.
Place the nuts/seeds in a bowl. Add enough filtered water to cover, then set aside to soak for the recommended soaking time:
Almonds: 12 hours Brazil nuts: 12 hours Cashews: 2–4 hours Hazelnuts: 12 hours Macadamia nuts: 7–12 hours Pecans: 4–6 hours Pistachio nuts: 4–6 hours Pumpkin seeds: 7–10 hours Sunflower seeds: 2 hours Walnuts: 4–8 hours
After soaking, the nuts or seeds will look swollen puffy and may even start to show signs of sprouting. Drain the water and rinse the nuts or seeds under running water.
In order to toast the nuts or seeds without damaging all the nutrients you’ve activated through soaking, you’ll need to do so over low heat – either in a dehydrator or on the lowest temperature in your oven (at 50°C /120°F). This will take anywhere from 6 to 24 hours. The nuts or seeds are ready when they feel and taste completely dry.
